{"id":305,"date":"2012-01-20T18:19:27","date_gmt":"2012-01-20T16:19:27","guid":{"rendered":"http:\/\/blog.the-leviathan.ch\/?p=305"},"modified":"2015-03-15T18:52:05","modified_gmt":"2015-03-15T16:52:05","slug":"banh-bao","status":"publish","type":"post","link":"https:\/\/blog.the-leviathan.ch\/?p=305","title":{"rendered":"B\u00e1nh bao"},"content":{"rendered":"<p><a href=\"https:\/\/blog.the-leviathan.ch\/wp-content\/uploads\/2012\/01\/banh_bao.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-310\" title=\"banh_bao\" src=\"https:\/\/blog.the-leviathan.ch\/wp-content\/uploads\/2012\/01\/banh_bao-300x225.png\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/blog.the-leviathan.ch\/wp-content\/uploads\/2012\/01\/banh_bao-300x225.png 300w, https:\/\/blog.the-leviathan.ch\/wp-content\/uploads\/2012\/01\/banh_bao.png 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Howdy<br \/>\nYesterday I&#8217;ve made me some &#8220;B\u00e1nh bao&#8221;.<br \/>\nBasically its steamed bread with meat within.<br \/>\nOf six only one survived until now, and I&#8217;ll eat this one, just after I&#8217;ve written this entry.<br \/>\nIt&#8217;s really delicious and I can only suggest you to try it as well.<br \/>\nAs you can see, I left out the eggs, because eggs don&#8217;t agree with my stomach.<\/p>\n<h1><strong>The dough<\/strong><\/h1>\n<h2>Ingredients<\/h2>\n<ul>\n<li>A pack dry yeast<br \/>\n<strong><em>(Read on the back, for how much flour it&#8217;s supposed to be used!)<\/em><\/strong><\/li>\n<li>1\/2 tablespoon salt<\/li>\n<li>1 tablespoon tapioca flour<\/li>\n<li>250g flour<\/li>\n<li>20g sugar<\/li>\n<li>125ml warm water<br \/>\n(&#8220;hot&#8221; mode of the water-tap is sufficient)<\/li>\n<li>Add 1 tablespoon distilled vinegar into the water<\/li>\n<\/ul>\n<h2><strong>Processing<\/strong><\/h2>\n<ul>\n<li>Put the dry ingredients into a bowl and mix it well.<\/li>\n<li>Put the vinegar and the warm water into a cup and mix it.<\/li>\n<li>Put it into the bowl with the dry ingredients and mix it, then knead it.<\/li>\n<li>Let it go up for 3hours.<\/li>\n<\/ul>\n<h1>Stuffing<\/h1>\n<h2>Ingredients<\/h2>\n<ul>\n<li>Some ground meat\u00a0 (anything does it)<\/li>\n<li>Vietnamese sausage alias Lap Suong (l\u1ea1p x\u01b0\u1edfng)<br \/>\n<a href=\"http:\/\/en.wikipedia.org\/wiki\/Chinese_sausage\">http:\/\/en.wikipedia.org\/wiki\/Chinese_sausage<\/a><br \/>\n<strong><em>Very important, because it gives the characteristic taste to the whole stuff!<\/em><\/strong><\/li>\n<li>Mushrooms (Shitake)<\/li>\n<li>1\/2 Onion<\/li>\n<li>1 tablespoon sugar (Yes! That much!)<\/li>\n<li>1 tablespoon salt (Yes! As well \ud83d\ude09 )<\/li>\n<li>1\/2 tbsp fish sauce<br \/>\n<a href=\"http:\/\/en.wikipedia.org\/wiki\/Fish_sauce\">http:\/\/en.wikipedia.org\/wiki\/Fish_sauce<\/a><\/li>\n<li>1\/2 tbsp distilled vinegar<\/li>\n<li>A bit of Garlic, Pepper, Paprika<\/li>\n<li>Maybe some glass noodles, if you like<\/li>\n<\/ul>\n<h2><strong>Processing<\/strong><\/h2>\n<p>Peel the l\u1ea1p x\u01b0\u1edfng and cut it into pieces.<br \/>\nCut the onion into small pieces, as well as the mushrooms.<br \/>\nThen take some of the pieces of the l\u1ea1p x\u01b0\u1edfng and cut it into smaller pieces and mix it with the fish sauce, the union pieces, the mushroom pieces, the sugar, the salt.<br \/>\nNow spice it up with garlic, paprika, pepper, etc. until the sauce gets a very intensive sweet-salty taste.<br \/>\nPut two hands of ground meat into the stuff mix it well.<\/p>\n<p>The filling procedure is similar to the one for Manj\u016b <a href=\"https:\/\/blog.the-leviathan.ch\/?p=204\">(https:\/\/blog.the-leviathan.ch\/?p=204<\/a>), only &#8220;upside down&#8221;.<br \/>\nWhich means, that you close the package on the top, not on the ground.<br \/>\nYou take the dough, make a similar plate, like with the Manj\u016b dough, and then put a fist of the filling into the middle.<br \/>\nThen you put some of the l\u1ea1p x\u01b0\u1edfng pieces on the side of the raw meat ball and close it, like described for the Manj\u016b.<\/p>\n<p>Also steaming is similar to Manj\u016b, only a bit longer, because it&#8217;s meat within:<br \/>\n<strong>Steam it for 30-40 min<\/strong>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Howdy Yesterday I&#8217;ve made me some &#8220;B\u00e1nh bao&#8221;.
